Traditional jumeokbap uses very basic ingredients. You probably have most of them already.

In a large bowl, mix the warm rice with a teaspoon of sesame oil and a pinch of salt. Taste and adjust – you want a gentle seasoning, not overpowering. Sprinkle in a few sesame seeds if using.

Wet your hands lightly with water to prevent sticking. Grab a handful of rice (about the size of a tennis ball) and gently shape it into a round or slightly oval ball. Press just enough to hold together, but do not squeeze too hard or you will get dense, mushy rice balls.

Place each finished rice ball on a plate or tray lined with parchment. You can eat them right away or let them cool completely before storing.

Three Easy Filling Variations for Your Rice Balls

You can also just mix the fillings directly into the rice before shaping. That is faster and works well for uniform flavor throughout the ball.

Tips for Packing and Storing Jumeokbap

Let the rice balls cool completely to room temperature before covering them. Warm rice creates condensation in the container, which makes the balls soggy. Nobody wants a mushy rice ball.

Store them in an airtight container lined with a paper towel. The paper towel absorbs excess moisture and keeps the rice balls firm. They last 3 to 4 days in the refrigerator. For longer storage, freeze them on a baking sheet, then transfer to a freezer bag. Thaw in the fridge overnight.
